Cassava dough is made from fresh cassava. After grinding the cassava, it is left for a few days to allow the water to drain out. After allowing the excess water to drain out of the cassava the packaging process begins.

Cassava dough can be cooked on its own or mixed with corn dough to make various African dishes such as banku or kenkey.
